That looks and sounds like frankenfood to me. I personally would never eat it as it probably has zero nutritional benefits for your body even if it doesn’t kick you out of ketosis. I had to google it and the way the company describes it on their website sounds unappealing:

How is Carbalose ™ made?
Carbalose™ is made through a unique process and contains Enzyme-Modified
Wheat, as well as Plant fiber, Wheat protein and some unique conditioners,
enzymes and emulsifiers. Carbalose™ does not contain any soy protein,
sugar-alcohols, dairy, animal-originated, trans-fatty, or saturated fat products.

Upon request, it is also available soy-free.

I’ve tried it and wasn’t impressed. You can make your own baking blend with coconut flour, almond flour, baking powder, etc. I’m having fun experimenting with it even though most are fails, I get something good every now and then.
