Working on a Recipe - Need a Honey Subsitute

So my mother use to make this crock pot chicken that was pretty tasty…but had 1/2 cup of honey in it. The other ingredients are low enough in carbs I can probably get away with it…but…what can I use to replace the 1/2 cup of liquid that honey would provide? Sure, I can use monkfruit or Stevia or something like that for the sweet factor - and probably will. But I’m wondering what is an easy alternative. I’ve thought about trying to make my own sugar free version – https://tjstaste.com/homemade-honey/ like that one…but just not sure.

Sukrin makes several types of sweeteners. I’ve tried them, and my fav is the Gold Fiber Syrup. Reminds me of molasses. They also make a clear in the Fiber Syrup. Spendy, but I don’t use them alot.

I’ve also used Nature’s Hollow Honey substitute. Made from xylitol. It tastes nice, but is kinda thin, whereas the Sukrin is very thick, like honey.
