yeah but make your own or check the label. a lot of commercial cauliflour products have real rice mixed in. really easy to make in an instantpot

If you want cauliflower rice use a food processor or a box grater. It cooks really fast, I don’t know why you’d want to use an instant pot. Microwave for a minute or two, stir fry or steam for a couple of minutes.
