What’s your favorite way to “fatten up” chicken breasts?

(Jennifer ) #1

Hi All!

Have some chicken breast sitting in the freezer and want to use it, but of course I want a nice way to fatten the meal up. What’s your favorite thing to do with chicken breasts that fattens the meal up?

Thanks in advance!

my wife likes the chicken breast so I just pour olive oil, or butter on my plate, add salt and pepper and then each piece of breast is rolled around in the oil. Add in some garlic or turmeric if feeling crazy.

Hollandaise Sauce goes beautifully with dried up chicken breasts!

I love this chicken cordon bleu casserole. So easy! I don’t add in the extra salt (it’s way too salty if I do) and I usually mix the chicken breast and ham with the sauce before putting in the baking dish and topping with the Swiss cheese slices.

I haven’t had chicken breast in over a year.

But I’ve baked lots of thighs, legs, drumsticks and wings!!!

My go to is to make buffalo sauce. (melted butter and hot sauce). Slather it on, and load it up with home made blue cheese dressing.

Yum! :sunny:

+1 for don’t buy them and get skin-on thighs instead (cheaper/tastier)

+100 for buffalo sauce though I have mine with sour cream rather than blue cheese (I know, I’m weird)

Been there. Done that. Delicious.

But man do I love bleu Cheese!

I didn’t for the longest time (46 yrs) but am beginning to appreciate it (e.g. on a wedge salad… mmm, bacon). Might try it on my wings… eventually.

I make mine with equal parts mayo/sour cream. Splash of ACV, salt, pepper, garlic and onion powder. Sooooooooo gooooooood!!!

I do love me a good casserole. Thank you - this looks great!

Wow - thanks everyone who has replied so far. @lkfoster1 I made the chicken divan last night…wow. I’m in the middle of a fast (I was making it for my partner) and holy crap…I almost snapped. That chicken almost single handedly broke me. My goodness.

I like chicken breast and don’t find it dry unless it is overcooked. I coat them with a little avocado oil and some spices, then grill. The trick is a meat thermometer. Cook to 165-170 and no higher.

I like them plain, dipped in a mayo/bbq sauce combo, sliced up on salads, reheated in a stir fry type dish, lots of ways.

Coat in egg and roll in pork rinds. Fry in lard. Serve with wing sauce and blue cheese or maybe some honey mustard. Fat o rama.

Make a little cavity in them and fill with mozzarella. Wrap in bacon, and bake in oven. Serve with any of the sauces mentioned above!

This sounds amazing.

@Tommy that sounds…scandalous. I will have to try that.

Always goodol’ chicken parmesan to me. It’s got gooey cheese on top, tomato sauce at the bottom, can be served with spaghetti.

For the recipe, blogs like healthykitchen101, foodnetworks, etc. have them. Oh and be sure to flatten the chicken breasts before coating.
