What are your favorite dips for pork rinds?
What do you like to dip pork rinds in?
My latest fave is homemade cheese dip.
Though I’ve made my own pseudo cheese dip before using shredded mexican cheese, cream cheese, and salsa, the consistency was never really dip-like.
The solution, with a hat tip to @richard and @Brenda, is sodium citrate. I’m still experimenting to get the proportions right, but basically you start with 1/2-1 tsp of sodium citrate in a saucepan on medium heat, and add enough water to cover the bottom. Stir until dissolved and then start mixing the cheese in. I have seen recommendations to avoid pre-shredded cheese, since it may have additives that can affect the texture. My first batch was good, but not great, but I used a combination of cracker cuts of colby jack and pepper jack, along with some pre-shredded mexican cheese.
Going to try again soon with better cheese, and hand-shredded. Either way, it’s good stuff with pork rinds.
I think I’m the only person who’s not a fan of the sodium citrate technique though I do want to try using it to make cheese slices.
Whipped philly cream cheese. Philadelphia brand has a fairly new range of “bold” flavours that go really well with the blandness of pork rinds. My favorite is creamy sriracha…mmmmmm!
Do you have to dip them in anything – lol just kidding - I have to be careful or I can easily rack up the protein grams!
I sometimes eat them with a side of good goat cheese that gets nice and soft and delicious.
Oh I almost forgot! Melted cheese and salsa over them. Hot pork rind nachos.
Costco “La Terra Fina” Wild Salmon Dip. It’s 2 grams of carbs per tablespoon, so use sparingly. Just discovered this and I’m surprised at how good the combination is.
Don’t dip them in anything!
Place desired amount in a bowl
Sprinkle with curry powder (as much or as little as you like)
Drizzle with olive oil, or feel free to drench with olive oil!
Enjoy!
I “finish off”’ the bowl with a spoon, getting the oil, little bits of pork rind and hit of curry powder… delicious!!!
