What do I do with oxtail?

My husband and I bought a quarter cow from a friend’s grass-fed cattle ranch. Oxtail came in the order we received. I’ve never had it and never cooked it before. So I need some help… Yes I can google, but thats not as much fun as asking you guys. So… whats your favorite oxtail recipe? Please share! Btw, I don’t have an instapot or a sous vide.

What’s an oxtail doing on a cow?

I bet it would make GREAT bone broth but Ive never seen one, how much of it is bone?

Try the recipe in The Joy of Cooking for oxtail soup. It’s delish, but you may need to “ketofy” it. My ex and I used to make it all the time, back when oxtail was cheap, but then it got discovered, and for years, my inner Scotsman has just been refusing to pay $8.50/lb. for fucking oxtail.

I googled… Its just a generic culinary term for the cattle tail. :woman_shrugging:
