In the backyard again. Meatballs on the grill

Meatball recipe. I don’t measure ingredients, I can’t be bothered with details. I just cook.

A pound of 80/20 beef
A pound of Johnsonville bulk mild Italian sausage
3 egg yolks
A few shakes of wosheshestire sauce
A bunch of freshly grated Parmesan cheese
About a cup of mozzarella cheese
Salt and pepper
Sriracha
About half a cup Finely processed pork rinds
Half a cup diced onion.

Mix that mess by hand preferably a day before.
Form balls before cooking. Wrap some of them with bacon.

Get the grill as hot as possible set indirect cooking.
Get them balls on there. Should take about 15 minutes to 155 degrees.
If you want some char then at 150, toss em over the coals.
Or cook in the oven

I started with this recipe below. I used some low carb bread I had in the freezer instead of the gluten free panko. I used parmesean and cheddar cheese. It’s like a meatloaf; you can throw anything in there that you like.

Thanks, these look great! I’m going to try this tonight with a bunch of wild greens I just picked (mustard, curly dock, wild radish leaves).

I’m allergic to wheat so do you think I could sub pork rinds for the low carb bread crumbs?
