Hope your experiments are successful. Let us know your results. That’s an interesting idea about the fish sauce. I’m not sure I’m brave enough to try it.
What did you Keto today?
Original Worcester sauce was an attempt by two western guys who’d had fish sauce in the late 19th century to recreate it in the West. Had anchovies in it and everything. Fish sauce is just a more direct route to the umami, without the other flavors in Worcester.
That said, tasting things is like the single most important activity you can do while cooking. I wouldn’t replace Worcester 1:1 with fish sauce. It’s be way too strong. I’d probably replace with some tomato paste and a dash of fish. Rounder total flavor.
I’m a huge fan of Vietnamese fish sauce. I exclusively use Red Boat brand. It has no extra shit in it.
@fischersd @LeCheffre
I have a recipe (somewhere) for a paleo take on Worcestershire that contains anchovy paste - didn’t take much and was quite nice. I’ll try to dig it up and see if anyone’s interested.
Yep, that’s what’s in my fridge as well. Red Boat is pretty much the go-to for most people I think.
WTF??? I don’t even know how to respond because I reject the basic premise of that statement.
I feel like I don’t even know you anymore @CandyLindTX
First fathead pizza try. Turned out really good in the cast iron. Used a homemade pesto sauce instead of red sauce. Cheese and pepperoni. Ommmm nom.
These beauties are bacon wrapped tenderloin roses, mmmmmmm I made them with leftover tenderloin strips from making the Hubby tenderloin wrapped around cream cheese stuffed jalapeños. What are your thoughts on cooking? Bake and then a touch of broiling to crisp up the bacon? I plan to try 2 in the air fryer.
That’s how I would do it. 325-350 for a half hour, then switch to broiler for a few… maybe with a little cheese sprinkled on top.
