Yeah, this is pretty much just a speed/timing thing. Stick a pot of water on the central burner, dump the veg in once it’s boiling, dump the veg out and drain then leave them in the hot pan. Switch to the cast iron on the same burner for the meat. Foil wrap that to rest, then the veg go into the cast iron to finish and everything’s done : )

Main aim always is to preserve some crunch in the veg. Nothing sadder than soggy vegetables : ( (well, that’s not strictly true… overcooked fish and meat is an absolute sin in my eyes, but you get the idea xD)

Al dente all the way…you think I enjoyed my mother in law’s ‘boiled to mush’ Brussel Sprouts?
Even my ex wife hated them…that’s why we ate at my mum’s at Xmas mainly, approx ratio 2:1 lol!

(Meanwhile I had my dinner and devoured everything on my photo and a bit more. Ahhh satiation, it’s nice.)

I cooked the hell out of absolutely everything :slight_smile: Okay, mostly fried. Very well. So I tried to stop right before the charcoal phase (before my induction cookers it was tricky so I ate insane amounts of charcoal. not anymore, yay!). My vegs and eggs were brown alike :smiley:
I don’t do that with all my meat just most of it. Pork likes its 2.5 hour roasting. But apparently I can eat 10 minutes fried chicken liver (not comparable as a little thing in a pan requires way less time but still). And my eggs are more moist now.
But if it comes to boiled eggs, I like when it’s almost liquid… Or when the white is hard-boiled. The yolk isn’t good then though sigh.

You probably wouldn’t like Hungarian veggie dishes. The very typical way to make them is just cooking them into softness. Not necessarily a mush but split peas requires that, actually (I made some today. I dislike it but it’s about no work and my SO loves it and can eat 4 days per week. He doesn’t do it as when would he eat the other legumes then?).
I may like well done things but I always preferred dishes where I can chew my food (desserts don’t count, they are fine creamy, I like variety).
Most vegs are best (and easiest and feels a lot) when raw :slight_smile:

My go-to on the road - burrito bowl with no rice loaded with extra steak, queso, sour cream and guacamole

Dinner.

Was really craving seafood today.

Smoked mackerel cooked up with some spinach, garlic, celery. Prawns pan fried lightly (bought raw) in a little ghee, with a sauce made from sour cream with a dash of lemon juice and zest, a single red bird’s eye chili, and a lot of chopped dill and parsley : )

Some recent keto meals, with a bit of ‘dorty keto’ thrown in as I wasn’t able to cook, being on a 3 day First Aid course in a city some way from home.
Here’s those boring, but tasy and good value chicken kebabs:

Brunch…salami, fried eggs, fried spring onion and chipotle mayo.

Very messy! Spicy sliced roast chicken breast omelette.


Bit of a mix, roasted with olive oil in oven.
Pork sausages, beef burger, chinese style pork ribs, marinated chicken kebab meat, mixed baby peppers and mushrooms, garlic, paprika.

The dirty keto!
From the Chinese take away restaurant…House Special (mixed meats) Foo Young (type of Chinese omelette, as I’m sure you know already) .
Why is it dirty?
Because I suspect it wasn’t cooked in the healthiest of oils, lol.
Was tasty though, in a nostalgic way.
Sure, once in year and a half and I’ll forgive myself.
I also got some salt and chilli barbecued pork ribs too.


The restocking of fridge nibbles tonight- buffalo chicken wings which I nearly managed to char.

Rocket and Camembert topped with 4 slices of smoked bacon and 3 eggs.

Chicken breast (baked with just a little ghee, salt and pepper) on rocket with a little grated Parmesan, two boiled eggs with avocado oil mayo, and some pork crackling.

Two chaffles topped with rocket, and a bacon, chicken and egg salad made with avocado oil mayo, fresh parsley and a dash of lemon. Would normally chuck some actual avocado in there but it was only pretending to be ripe xD

It was my plan for lunch and maybe part of dinner 2 days ago but I only found it today.

Pork, beef, eggs, chicken liver…

It turned out beef shank is fine to make in pressure cooker and eaten with some yolk-mustard-butter sauce :slight_smile: It was okay with only butter but this sauce was better!

I had difficulties on that day, I had no dairy (except a tiny bitter), was bored of pork and while I ate up my last eggs, it wasn’t enough… Later I got out some fried 70/30 pork from the freezer (it wasn’t that fatty as it always loses some lard but it’s pretty fatty and well fried, I love it) and it turned out my pork aversion lifted :wink: I ate a lot of it after midnight and it felt amazing.

Next day I had only meat and a little butter at home, 5 different animal species but only turkey was in significant amount. And I didn’t want it. I ate it eventually but it was a hungry day.

Today is a bit off but I bought eggs and quark and fried 70/30 pork and ate a significant part of it, yum.
