It’s so delicious and filling! I made spaghetti Bolognese for the sugar burners tonight…so I put the Bolognese in an oven dish…made a few little wells for the eggs, pop them in and douse the lot in grated cheese…bake it for 20 mins and Bob’s your uncle!

I’d like to do a ‘pizza’ version again soon with mozzarella cheese and pepperoni…

This is my idea of a quick go-to brunch. I make a thin egg “pancake” (eggs only) in the skillet. Then spread spicy mayo over it, and add turkey, tomato, lettuce, and bacon (when I remember). Lunch… Made my Son and I a quick Chaffle Sandwich. - Ham, Cheese, Hard Salami, Pepperoni, Turkey and Mayo. Also had 2 Hard Boiled Eggs and a bottle of Almond Milk.

I’m working tomorrow, got my sardine chaffwich ready! But might just bake my ragu with eggs as @ClareBear when I get home :yum:. Looks delicious!

Continuing the lazy theme for lunch. Then, I have to get busy & fix food for when Wayne gets home day after tomorrow! Leftover rotisserie chicken, cole slaw, cheese sticks. Extra dressing, so I’ll dip the chicken.

Dinner… I made my Mini-Taco Salami Cups. - Ate 6 of them, and just ate the remaining meat with some Cheese and Italian Dressing. Also had a Grape Zevia. (I was out of Tea at the moment) & 15 Almonds

I made @Digital_Dave’s egg foo yung and it was delicious. I used 1/2 tsp allulose in the sauce since my hubby doesn’t like stevia.

I made a half recipe and it made 5 patties. I saved the shrimp and bean sprouts in the fridge to make again in a few days. Made the full recipe of the sauce so saved that also for the next batch

I started out with the mayo method of a stick blender in a wide-mouth jar. It worked the first few times but wasn’t as thick as I’d like. Then I kept getting failed emulsions and couldn’t make it to save my life. I salvaged a couple by adding an egg yolk but still runny.

I finally decided I needed to try another method so I searched the net and tried one that uses a mini food processor. Worked GREAT! Thick, creamy perfect mayo… except it made a terrible mess on my countertop since my mini didn’t have a pour spout and every time I took the lid off to drizzle some more oil in I dripped on the countertop. By the end I have quite a mess!

So… I found this beauty on Amazon and it has a small pour spot in the lid. Not ADDING another appliance - retiring my old mini to Goodwill. My Mom gave it to me over 30 years ago when I was in college so I’ve got my goodie out of it.

It made PERFECT mayo! Thick and creamy and the recipe has a Tbl of Dijon mustard so very tasty.

A little more cleanup than mixing straight in the mason jar but so much better outcome. I’ll see if I can find the video - I already typed up the instructions and saved so didn’t save the link to the video.
