I ate this yummy chicken, caulirice and a little broccoli.
The secret to my Nashville Hot Fried Chicken is unflavored whey powder. This dish is packed full of flavor. Anyone else fiddle around with unflavored whey powder?

Boneless Nashville Hot Fried Chicken | Keto

Ingredients:
1 - 1½ pounds chicken pieces, boneless, skin on
2 tsp. cayenne pepper
2 tsp. fresh ground pepper
2 tsp. onion powder
2 tsp. garlic powder
1 tsp. Himalayan salt
2 Tbsp. paprika
2 Tbsp. powdered erythritol
1 cup unflavored almond milk
½ cup whey protein powder (plain unflavored)
Refined coconut oil for frying (enough to come up halfway on the chicken
Ziploc bag
Himalayan salt and fresh pepper to taste

Directions:

Step 1
Add cayenne, pepper, onion powder, garlic powder, salt, paprika and erythritol to a mixing bowl. Mix spice ingredients until well mixed and reserve half of the spice mixture.
Add almond milk and half of the spice ingredients to a large Ziploc bag and mix well.
Add the chicken and massage the spices into the chicken pieces until evenly coated.
Seal the bag and rest the chicken in the fridge to marinate for 2-4 hours.

Step 2
Preheat the refined coconut oil to 350 degrees.
Remove chicken from the Ziploc bag and discard the almond milk marinade.
Add the whey protein powder to the reserved spice mixture, mix well.
Dip the chicken pieces into the whey/spice mixture completely coating. Shake off excess coating and rest on a dry plate.
Fry the Keto Nashville Hot Fried Chicken in refined coconut oil until cooked.

Step 3
Serving Sauce:
¼ cup of the hot frying oil
2 tsp. paprika
1 tsp. cayenne pepper
Garlic powder to taste
2 Tbsp. Swerve Brown Sugar
Mix sauce ingredients together well and spoon or baste over the cooked Boneless Nashville Hot Fried Chicken.

I’ve been taking part in challenges on reddit, this week’s theme is “from scratch.”
I made tafelspitz, Austrian boiled beef…
I used my IP: i made bone broth, with which I made stock (I added yellow+orange carrots, kohlrabi, onion, leek, spices), and then I cooked tafelspitz (picanha) in the stock.
Asparagus, poached eggs and herb hollandaise on the side :slight_smile:

We had a new baby born in the family this morning (not mine, thank god) so it’s celebrations all round…cheese, chocolate and keto quarantinis…vodka, brut cava and a little fizzy water for hydration :joy::blush::joy:

Steve, this sounds over-the-top great!!

I’m eating a beef fajita taco salad (which I forgot to photograph) today, but also put 3 turkey wings in to slow roast with some radishes & celery earlier. Here’s how they looked after 3 hours. I put the veggies back in at 400F to try to get a little char, but gave up after 20 minutes. They were too moist. They will still taste great. Saved the juices for gravy (of course), but that’s tomorrow.

That was my most favourite meal on a recent trip to Vienna, taken just before the world went into lockdown! :yum:
Today I had the last of the chicken Madras!
And made an egg mayonnaise chafflewich for tomorrow.

I am going to spend an hour or two with my Mum! I will sit in the garden whilst she stays in the sunroom! Obeying/disobeying the ‘rules’!
She is very lonely and getting a bit distressed with it all :disappointed_relieved:

I mentioned a few days ago that trying to make a “waffle” out of some leftover chicken salad failed miserably. So, this morning, I used them to stuff some bell peppers:

The side dish is some caramelized onions and mini-bell peppers. With cheese on top. :slight_smile:
