Today has been a good day in a lot of respects…Since this quarantine kicked in I’ve tried to see the positive in each today…for example I managed to lift the heaviest weights yet this morning for my morning workout…my line manager has identified I’m working too hard at the moment which has been causing me some stress…and I had a bottle of wine which makes everything better…but at the same time there’s always that hint of negative niggling away in the background making me angry and unhappy

.well I addressed that head on today. I know it’s gonna go down like a pair of lead drawers but sometimes it takes something like a pandemic to make you realise what’s holding you back from being truly happy. A bit deep I know for a food thread. But I’m ready for this, and I know you guys support me :kissing_heart::kissing_heart::kissing_heart:

Simple dinner of pork chops and greens this evening…washed down with cream, chocolate and pinot grigio xoxo

Sundubu-jjigae. Tell you what- when made with pork belly and and egg, this is the most filling, calorie dense bowl of soup ever! I know- the tofu is phytoestrogen- but I couldn’t see throwing kimchi in the bin just because it’d gone a little mushy! And at 6 net carbs for a bowl that’s calorie dense enough to serve an OMAD day, I give it a thumbs up.

Tried to do a chicken salad waffle tonight, along the lines of a patty for a tuna melt.

It failed miserably. No binder. I had to scrape off all the little pieces that stuck to the waffle griddle.

On the positive side, the bits and pieces tasted delicious. I bet it would make a great stir fry base with some riced cauliflower and other veggies.

And, BTW, is everyone aware that G Hughes now has a SF Teriyaki Sauce and a SF Sweet Chili Sauce? Yum.

Bit of a hot day for hot soup in the garden! Still, there’s a nice breeze (just had to retrieve the crossword, as it blew away!).

Pimped this batch of broccoli, cauliflower, basil and cream cheese soup with a spoonful of pesto and some cubes of mature cheddar. Delicious - but rather alien-looking with those green oil slicks!

Pork chop with coconut aminos smothered in garlic chives grown in a pot on my deck, half a green bell pepper. Not pictured, had some olives and pickled mushrooms as appetizer an hour earlier.

The garlic chives taste just like garlic, but have a second flavor of spinach or such. I am getting really fond of the tangy coconut aminos.

you know what goes great with soup, fried cheese! lol but seriously, I have been eating that meal all winter… I am glad it’s warming up but a bit sad I will be moving from soups/stews to salads…

you are wise! my garlic chives are trying to take over my flipping garden right now…

Yep. That’s why I grow mint in a pot also. At least chives are pretty when in bloom… mint just becomes a nuisance.

Went non-traditional for brekky today - a Chaffle “pizza” usings Rao’s sensitive sauce, sliced low-carb chicken meatballs, mushrooms, & mozz. Then I have to call a service dude to check out my dishwasher … :neutral_face: started making an awful noise last night.

Corned beef brisket is the gift that keeps on giving! And, so are my 2 geriatric hens. Yesterday, the old folks’ hen house revealed 3 nice fresh eggs… This morning…Ta Da!

This, my friends, is one of the many reasons we stick to raising chickens, turkeys, and grass fed beef cattle. =)
