After a month of thinking about spring cleaning the house, I finally leapt out of bed and did the first room!
4 hours later I remembered the lamb cutlets I had put in a low oven with a pot of lamb stock and an onion!


OMG, nearly lost them, but in fact they were meltingly tender and sticky and I ate the lot! :yum:
All thoughts of cauliflower mash and saving half for tomorrow forgotten!:roll_eyes:

WITNESS STATEMENT:
On the fourteenth day of March 2020 Mr & Mr Snaps did attend said house for the purposes of recreation, sociability, laughter and the imbibing of impeccably-planned and prepared out-of-this-world delicious ketogenic victuals.
During that evening they keenly embarked upon a guided tour of @Crackerjax’s beautiful home. All rooms were visited and admired hugely - this lady has an eye for a beautiful interior and a penchant for pre-Raphaelite art.
At no point did it occur to Mr & Mrs Snaps that @Crackerjax’s house would ever require the broad brush of that thing called ‘spring cleaning’, witnessing instead the overwhelming evidence that @Crackerjax’s home is nothing other than welcoming, pristine and beautiful at all times.

What a wonderful evening it was! And so much has happened/not happened since, it hardly seems possible!
Thank you so much for your very kind assessment of my housekeeping! Today I have washed windows, ornaments, curtains, pictures and glass! Two bowls of dirty water are proof that dirt can always be found!

I know exactly what you mean - Mr S has been cleaning the Venetian blinds - the water was BLACK! I’m horrified at how grotty the blinds had got…

Back to food issues - inspired by @Janie I am making quiche! A buttery softened onion, leftover ham, grated mature cheddar, eggs and cream. Just about to pop the oven on and will pour the custard in in situ!

The last couple of days of dinner.

Fathead pizza with uncured pepperoni, mushrooms, mozzarella, Parmesan, oregano and red chili flakes.

Parmesan and pork rind crusted pork chops on a bed of roasted fennel root with sautéed beet greens and butter. The recipe is good and I’ll share it once it’s been released for free distribution to the public. And it was hard to not eat the beetroot with the greens- they’re so darn good. But they spike my blood sugar so much! The greens are at least as delicious as the root though, just differently so.

I’ve got a pork belly in the pressure cooker for tonight’s dinner. I’m lifting the moratorium on phytoestrogen foods for the day and making a big pot of Sundubu (Korean silken tofu stew) because while my last batch of kimchi tastes good, it turned mushy. So soup!

@Janie this quiche was awesome - thank you so much for the inspiration!

1 onion sweated in a lot of butter until translucent and mushy, spread on bottom of greased flan dish.
2 slices smoked ham, chopped, and 150g mature cheddar, grated, layered on top of onion with some black pepper (cheese, ham, cheese).
6 eggs, whizzed up with 250ml double cream, some salt and the drained butter from the onion, then poured into flan dish.
160 degrees Celsius for 30 mins, turn, another 10 mins, oven off but leave in for 10 mins, then take out and leave 5 mins before serving.

It was JUST cooked - warm, tender, quivering… I SO can’t wait for tomorrow’s leftovers.

I LOVE this forum. It makes me make things I never knew I could make.

Pretty bacons, guys, all of them! I never eat bacon but I eat smoked pork from a nice little farm (almost always raw) so I am happy since I figured out it’s not even more expensive to eat a nice amount every day… Because I don’t eat a lot of other stuff then :wink:

I never made a quiche but it’s scary to me, all that dairy, I fear I would prove I can overeat on almost carnivore… :scream: I am a bit pessimistic these days, feels wrong as I am usually the opposite. I never used so much cheese in a single dish either. But maybe I will try it one day, I can make it smaller, right? I have some cheddar but I go shopping again after 1.5 month or something so I get HWC as well…
@KetoSnaps, it’s a gorgeous quiche, looks absolutely perfect.

I bring some photo next time! I was lazy today and had no idea how big lunch I will eat. I ate about 3 times as much as yesterday… How can I make a shot then? Maybe the pretty parts will be enough…
Tomorrow will be prettier, it will be keto and not very simple almost carnivore (more tasty than pretty) like today!
