What Did You Keto Today? Part IV

food

Ate the 2nd of the 2 beef ribs today which was as good as the 1st yesterday and almost as big!

Just having an omelette now. Was watching This Morning on TV this morning lol and they cooked a smoked haddock omelette. Decided to adapt it to what was in the fridge so whisked up (usually just fork it) the eggs and popped in fry pan with butter. Added parmigiani cheese, smoked trout and topped with grated cheddar. Stuck under grill and voila. Very tasty!

If you’ve seen any of my previous posts here, you’ll know that I generally break my fast with a cheese board:

Next up was çılbır, a Turkish dish that has quickly become one of my favourite breakfasts. This rendition used Icelandic skyr, poached eggs, goat milk butter, and Aleppo pepper.

Dinner was deconstructed fajita bowls: flank steak, cooked sous vide and then seared in a cast iron skillet; sautéed bell peppers and caramelized onions; homemade guac; and mascarpone cheese.

Dessert: a milk chocolate bar from Pralus filled with honey almond pistachio nougat.

What’s the big square of cheese?

Looks really yummy

Lunch today _ chicken breast fillets slow cooked in the leftover tandoori stock from the lamb breasts the other day. Reheated with a timey bit of the stock and added grated cheddar. Had a lasagne taste to it… very very delish and will no doubt eat some more later!

Left over stock is great to cook with!

(Karen) #2992

A bit like curries … gets better each time you reheat it but I just popped a little in fry pan with the breasts to keep them juicy while i reheated them. The bowl above is soup/dessert bowl it is the cheese that makes it look like there is a fair bit of stock. The cheese is a great way to thicken it though instead of flour or cornflour. I haven’t used flours of all kinds for years.

Rats I was going to fast today, but then I looked at “what did you keto today”. I’m going downstairs to have some breakfast now. You guys are killers

Well, cancelled my leave for today and tomorrow, due to a bad rain storm. So will get back to Hunting on Saturday and just take a few more days off next week. … So just picked up a Rotisserie Chicken for lunch today since I wasn’t scheduled back until next week… Also Deviled Ham and Smoked Vienna’s.

Told the Wife I felt like Fasting, but that I would eat a little bit of the Roast, Radishes and Onions she made. … I only ate half the Roast shown, giving the other half to the Girls. Also had Cottage Cheese with a few Black Berries & Cream Soda Zevia. Ate some Almonds and 2 Squares Ghirardelli.

I gotta get me some big ol’ “Flintstone style” beef ribs!! I haven’t had beef ribs since last Christmas (we always have Prime Rib, bones included!).

My kitchen photos are never good due to the light (except when I use a flash but I rarely do), oh well. The meat is definitely not burnt  It was pretty good.

Pork chuck roast, smoked pork chuck (it spent a little time with the roast), sponge cake made in waffle mold (a bit cheesy), sour cream and eggmilk with cream and spices (clove is a must for me)!

I almost made it my OMAD but it was too tiny in the end and I weightlifted today anyway (it went very well, finally I raised the weight for some exercises)… But it was the majority of my day.

I always knew this but pork is awesome and chuck has the perfect fat/protein ratio for me. I just put it into the oven with some salt and it will be perfect in 2 hours… We will do this again very soon.

Two deviled eggs, sardines on crackers, lovely salad.

(Karen) #3001

Mine from the butchers is bone in and I guess they do look kind of flintstones size when I buy them then the beef shrinks around the bone with the slow roasting and is just sooo tender.

(Jane) #3002

Red curry chicken and zoodles with tumeric, curry powder and some fresh herb from my indoor garden.

Roasting Brussels, broccoli, onion, orange pepper. Will finish with cheeses. image
BLT chaffle for dinner tonight.
