Lunch… Fried Eggs, Bacon, Sausage (links and patties) Also had a Cream Soda Zevia and Almond Milk and ate a few Almonds. About 1/2 once or so.

Friday was another eating day. I’m really happy with how everything turned out.

The prep started the day before with making garlic and tomato confit:

On Friday morning, I broke my fast with a selection of blue cheeses from Rogue Creamery:

Then I made pajeon (Korean scallion pancakes). They tasted quite different from my usual omelettes and scrambled eggs. I liked them!

Dinner started with a burrata caprese salad. The balsamic vinegar was out of this world! I found it on Amazon and it greatly exceeded my expectations. It was thick and syrupy and amazing.

The main course was a zucchini pie, which was sort of like a zucchini frittata except it was heavier on the zucchini and lighter on the egg:

Yum! A very tasty feast to end another 5-day fast. Onwards!

Not quite a “midnight snack”, but later (nearly 9:00 PM) than I normally eat supper.
Heated up some sausage. Forgot to post this picture last night.

Pork chop, mushroom, purple bell pepper (which lost all it’s beautiful color once cooked) mushrooms and a few walnuts, all roasted. The mushrooms are fantastic, and the King Trumpet isn’t quite as flavorful as Chanterelles, but it is very similar and has the same texture. Winner! I have been looking for an alternate to Chanterelles for a long time. Also in the mix and very good are the Beech, Cremini and Shiitake.

Crater Lake was my favourite from this batch although I can’t put my finger on why! Still a couple more in the fridge to try the next time I eat. And I’m giddy that my wheel of this year’s Rogue River should be here in 10 days.

Rogue River is sold out now, you got lucky. I am a fan of Oregonzola. I had a lot of regional variations of Gorgonzola decades ago in Italy, and those flavors stayed with me all these years. Oregonzola comes closest of what I have tried.

I preordered this year’s Rogue River months ago to make sure I’d be able to get a wheel when it was released! I think they’ll make it available in their online store once they get all of the preorders filled, though. There’s still hope :slight_smile:

Brunch this morning was back to basics and logging my carbs again. I’ve gained a small amount of weight that hasn’t shifted so I want to see if I’m eating too many carbs. Trying to keep it honest.

I found rebel ice cream up in Breckenridge. Just at the King Soopers. I haven’t seen it anywhere else in Colorado

Update: I went to our local King Soopers and picked up peanut butter fudge rebel ice cream. I haven’t had rebel ice cream before and it’s a bit more creamy than I would like. Still quite good

We have Rebel here in Maryland too, and I have asked the Wife before if she had ever tried it. I know that her and my Son will occasionally pick up some HaloTop here, but I’ve also seen Rebel brands in the case as well. (I don’t fool with ice-cream much TBH, maybe a spoonful or two rarely. - But it’s still nice to have some around, especially after eating something really salty or spicy. Couple bites is good)

Just finished making lunch… Made a Taco Omelette since it’s relatively easy, plus I wanted to try out the new pan V picked up the other day. I pretty much, or sort-of, destroyed the other one we had by me using it as a Searing Pan for so long. (But it worked great for a while! :smile:) But this one will be kept strictly for cooking Eggs, Omelettes, etc. Still have quite a few sm/med that work fine, so just the large.

This is exactly how I like ice cream a couple spoonfuls after something spicy!

I love Rebel way more than Halo. Halo doesn’t have enough fat I think. :thinking:
