Nice. Also good to see/hear of folks making the best out of these crazy times. And starting something up that works is always a plus. - I’ve always enjoyed Mushrooms and wanting to try some of the others I’ve only seen on shows, but searches in my area hasn’t produced anything that I was able to find yet.

The Wife just put a slab of Ribs in the oven to slow cook for a while, and I’m thinking about throwing together some Shrimp Egg Foo Young for lunch. … But I’ll definitely be thinking of Mushrooms! :smile:

We were just speaking last night about making up some Crab/Mozzarella stuffed Portobello’s. - I’ve done them in a few ways, including Taco-Stuffed, but this will be the first time trying Dungeness Crab

I find that if I eat a good size brunch it will hold me off till dinner, with only a mid afternoon cuppa with my fancy frothy cream.

Chanterelles and Porcini are my very favorite mushrooms. Unfortunately, they are not willing to grow in captivity. I was able to buy some frozen porcini but they end up extreme in flavor when frozen, and I add a tiny sliver to soups sauces and stews. Chanterelles I can only get dried, and it takes away the texture and omami flavors IMO. Once in a blue moon I see some in a package of “mixed mushrooms” at Fred Meyers (Krogers).

Had this the other day, when the site was down:

Chicken livers, marinated in sweet cream and wrapped in bacon (this is one of my faves now, the livers are nice and moist and the flavors compliment each other nicely, plus my dogs love it when I use the left over marinade as gravy for their meals) mushrooms and broccoli.

Dinner… Some BBQ Ribs, with Kale with Bacon. Plus a side plate of Cheese, Pepperoni, Olives and Pickles. Also drank a Coconut Bai and Iced Tea.

Local Greek restaurant (got carryout) - gf is good friends with the owner. Pic taken by gf before it was boxed as they made a mistake and thought we were eating in. Got a rack of lamb and side of spinach (not pictured). Did not eat the potatoes although they looked delicious!

Another really good food day. Dinner was a zucchini salad with lemon and feta. A little backstory on this one. Over a year ago DH bought a spiralizer for me and it sat in my cupboard for over a year before I tried it out. With low carb lifestyle though it quickly became a favorite. However the one he bought for me was just a ‘starter spiralizer’ and I quickly realized it’s limitations. I ordered a new one and I love it, seriously!

Awesome and you’re welcome. I think you will really love it. I’m looking forward to trying out different vegetables with it.

Have a good laugh at this picture, but it’s the reality of keto in a big truck where you can’t do your own cooking due to space limitations. This used to be 12 pieces of bacon for myself & hubby, but I didn’t think to take a picture until most of it was gone. I don’t trust Subway eggs to be “just eggs,” so we ate bacon. (I bought this, even though we have a pound of pre-cooked in the fridge, because we still have 12 days before we get home.) THANK GOD FOR BACON!!!
