Fried shrimp using the lupin flour/protein powder combo @kyarn posted. Yummy. The breading stuck to the second batch better - no idea why.

Made some Eggnog this weekend. Oh my! Keto treat found! I stay in Scotland and so I barely knew of Eggnog beyond the super-sweet additive to my Starbucks coffee. But proper eggnog. OMG!!! It’s supposed to age for at least 2 weeks. I’m not sure how much will last that long…or how much better it can actually get but hubby and me are already 1/3rd through it. I’m already planning to make another batch.
8 egg yokes
900ml in total double cream, lactose-free milk and a little water
~140g Natvia
2 cups of booze (bourbon, whisky and rum)
Pinch of salt
I’m going to eat nothing else this holiday season!
I never heard of having to age eggnog. Go ahead and drink it all! I know I would.
ridiculously good. Hard to only eat a few but I want them around for more than a day!
Just wanted to add to in case someone else wanted to try this. I scramble an egg and add half and half to it to make a liquid dip. Other bowl is half lupin flour, half unflavored protein powder with a generous addition of smoky paprika, garlic salt and pepper.
I dredge the chicken/shrimp through the dry mix, dip into the egg/milk mix and back again through the dry to batter the meat. I have a deep fryer I changed out the canola oil (pre keto and totally ignorant) for lard.
Batter for shrimp,fish etc;
Dinner… Dungeness Crabs, Haddock and some Shrimp. Butter and Tea standard on the side…
The recipe said it was good after a fortnight…but could last as long as a year! We’ll see if we make it to a fortnight first!
Lunch… Cheese & Summer Sausage, two Dungeness leftover from last night. Cream Soda Zevia.
Bacon cheese burgers with mushrooms and tomatoes.
Turkey with chaffles, avocado and tomatoes. Not shown - mayo.
Dinner… Brussel Sprouts in Butter, Top Sirloin, Onions and Mushrooms. Plus, the wife gave me 1/2 of hers, since it was one of the 2" thick cuts. … Black Cherry Zevia and 2 Squares Ghirardelli Chocolate.
Smoked a turkey breast (trial for Christmas dinner) for 5 hrs then finished up in the oven to get to 165F internal temp by dinner time.
OMAD… Steak and Bacon Salad. (One of my all time favorites!) Also had a few slices of Cheese and another small Steak on the side.
You all is going to have a heart attack with all that meat and fat!!

My first time dressing up a previously frozen beef patty with European style butter.
It was revelatory!
Having dispatched the defrosted beef patties, I am now fixing to EF.
