What did you Keto today? Part Deux!

(Diane) #5024

That is a beautiful loaf. Would you please share your recipe?

Knee has been bothering me that past 3 days, and it’s really holding fluid at the moment. So took the day off to rest it up some. … Woke to the smell of Bacon. Bacon, Eggs & Country Sausage.

(Full Metal KETO AF) #5026

Since you’re not working get out the epsom salt and soak in the bath. I hope you’re doing better soon.

#5027

Thanks David, also icing it seems to help some. … I started having this occasionally, after having an inner meniscus strain some years back. I believe it’s fluid retention related, but that’s just my guess. Seems to get quite puffy when it happens, and more-so if I drive more then normal. It’s like the front of the seat cuts off circulation under my right knee? At least this is what I think I’ve noticed over the years.

@Digital_Dave I’ve had severe atherosclerosis for 30 years in my legs. Long drives are the hardest. Lower leg swelling. Since I started keto it’s not much of an issue these days. My leg and a half are much healthier now. :cowboy_hat_face:

Dave, totally agree on the fluid retention. I think just sitting, period, sets us up for more chance of it, and I know that feeling you’re talking about. Behind the knee/on the back of the thighs - I get that all the time.

8 or 10 years ago, I had entire days of just sitting in an office chair - 24 or more hours straight, getting up only for bathroom breaks or to get food/drink. Lower legs really swelled up, I could make huge, deep ā€˜dimples’ by pressing a finger in. My toes were painful, all pressured up, and my right shin area leaked fluid - enough clear stuff to run down into my shoe and soak my sock.

Pressure on veins in the legs is part of it. Lack of exercise, walking, etc., is another. The ā€˜calf muscle pump’ helps return blood to the heart and likewise aids the lymphatic system which is also fighting gravity most of the time. (There’s a good bit that’s not well-understood there.) Being horizontal/getting enough sleep helps a lot too.

Driving is tough on a body.

Absolutely, here ya go!

Some notes: I did not use Xanthan gum, psyllium husk, or nuts. Used sour cream instead of Greek yogurt, and I put 1/2 cup of 85% cacao chips.

Happy baking!

#5031

Also, not sure how hers came out to be only 2g per slice. Mine were divided into 16 pieces vs her 12, but it still came out around 5g per slice. Worth it :)!

Bacon wrapped chicken breast, with steamed asparagus and fried courgettes. I decided to make a gravy using chicken broth and xanthan gum…didn’t come out too bad but I need more practice! I’m glad I put it in a dish rather than all over my dinner as I was worried I wouldn’t like it! Might try putting a pad of butter in for my next attempt.

(Candace) #5033

I’m calling this a Spring Omelette - it has asparagus, onions, mushrooms, garlic, baby spinach, cream cheese and salmon. I must admit, it is delicious.

(Brandy) #5034

A bits and pieces lunch meal for two which includes cream cheese and queso stuffed poppers while I catch up on Keto Dudes episodes and contemplate the need to cut dairy from my diet.

#5035

Thanks, guys. Yeah, I’ve actually been trying to make sure to get and move around when I’m stuck in the office, usually every hour or so, but when stuck in long meetings, this is not always possible. … But today, kept it iced most of the day and stayed off it some. Seems to have helped a little, but still swollen. Hoping to go back tomorrow and do the walking every hour to help some. Seems to be mostly on the right side of my knee, which is where it usually hits hardest. Again this didn’t seem to start happening until after the Inner Meniscus Strain that happened? … Thanks again.

I can’t remember the name of this dish but my youngest daughter came to town and we hit our favorite local Mexican place. I hurt myself lol

(Doug) #5037

:slightly_smiling_face: You had me at that roasted pepper, Tamela.

#5038

Cooked salmon for the very first time in my life tonight and it turned out amazing. Had a ton of butter on it though

Made a chocolate Keto Cheesecake for our anniversary dinner. Soooo good. Stuffed full of good food and now I’m fasting from now til dinner tomorrow

(Brandy) #5039

This hot mess is one of the best batches of braised oxtail I’ve ever turned out, if a little too much time in the Instant Pot. Ugh. Full.

Lunch today is a delicious cold plate of bacon, hard boiled eggs, coconut flour bread, olives, smoked salmon, avocado and keto mayo :yum:

(Diane) #5041

That’s a pretty plate of food! And so simple. I like it!!

#5042

Where did you find the coconut flour bread or did you make it?

(Steaks b4 cakes! šŸ„©šŸ„‚) #5043

I made it! Here’s the recipe:
