What crumbs to use for schnitzel

I love schnitzel, but I’m reluctant to use Kellogg’s corn flakes crumbs like before. This would be like poison for keto I would think. It’s hard to quantify how much would stick to one portion of meat in the end, but if it can be avoided why not?
Any replacements you could suggest that are decent taste wise?

Ground up pork rinds.

I used to use ground pork rinds. Worked beautifully.

(I don’t now because my lifestyle has changed.)

I used to love pork cracklings when a kid, but it didn’t last through teenage.

That sounds promising.

I’ve also used parmesan cheese, the ground dried type, as a breading successfully in the past.

Wow, great idea and Costco has it ready made. But won’t it melt? I guess sacrificing crunchiness for taste might be fine.

It hasn’t melted when I’ve used it as breading on chicken. I first thinly coated the chicken in mayo to make the parmesan stick to it properly.

To be fair, Parmesan is a very hard, dry cheese. But the few times I’ve had that pre-ground stuff (granted this was years ago) it really made me cringe because it just smelled like vomit xD

Mark Twain has a hilarious story about a man accompanying a coffin on a long train ride. Unbeknownst to the main character and the train porter, someone has left a Camembert or Limburger cheese on top of the coffin. It’s a cold day, so the wood stove in the baggage car has a fire in it. You can guess the consequence: the poor dead guy takes the blame for the smell of the cheese.

I absolutely adore Camembert, but you for sure know when there’s some in the fridge… door only needs to be open by a millimeter for .5 of a second and the whole house honks xD

taste wise is SO darn personal here LOL
I could NOT ever replace some tastes on ‘other recipes’ I loved as I changed and to ‘sub out’ for xyz better to fit my plan almost never worked for me…now this is ME personallly here

but ya got options.

ground rinds/any fat ground, like fried up chick skin or duck skin into powder form but does it ‘do it for ya?’
you got almond and or/other flours that are very keto friendly
you got cheese that can ‘fry up’ but again…

in the end the taste.

WE ALL went thru find you on this one :slight_smile: it is gonna be try this snitz. and see if ya love it or hate it or hit the 'net for more ‘snitz. options’ but hitting on keto requirements there won’t be many more than chatted about.

from reading over the yrs how we all eat, ‘fried foods’ are kinda dumped by the wayside cause they don’t float many of our boats, but some thrive when they hit ‘what works for them’ and suits them! you might find your own personal keto snitz that works for you!

I agree with Karen. My similar example is that I’ve given up on keto “bread,” because all the recipes I’ve tried, and a couple of the commercial products, all taste too eggy for me. I love eggs, but not when I’ve got my mouth set for bread, lol! And all of these recipes/products have been mentioned on these forums as tasting “just like bread.”

On the other hand, I love the Flathead pizza crust recipe, and many people on these forums have given up on it, because “it just doesn’t taste like pizza crust.” But it does to me!

So the individual reaction is paramount.

yea those who love it love it but darn for me personally I tried IT ALL and never could I replace what I loved thru the ol’ days of being that consistency or taste or ?? I had to say massive dump on ever trying to replace ‘bread’ as I knew and loved it

but some can and love it…I wanted to be one but I never was :wink:

it really is what it is all about!! eat long term and love it and it suits you or ‘gotta say goodbye’ but we change as we dump stuff in this journey and might ‘discover’ new loves as we progress to take our minds off what we left behind!
