What can I do with the skin off my ham leg?

I just bought a lovely leg of ham and I’m about to cut it up and eat some delicious ham but there’s all this skin that i don’t want to eat as is. It’s got to be good for something, right? I have no idea how to use it. Anyone got any ideas?

Maybe make some chicharones?

I like to cut it into large squares and roast it. I roast quickly and at high heat so the skin crisps up but the fat underneath doesn’t all melt away.

You can use it to make ham stock. If it is bone in ham, and it should be :innocent:, toss that in with it. Cook for as long as you can stand it.

Then take the actual skin part and slice it very thin into strips let them dry out some after the stock is made, and toss them into hot bacon grease to make pork rinds. Now that is really getting your money’s worth from a ham.
