Wow. Well if they say it is delicious and the restaurant has been successful for 45 years, they obviously has something going for them. I wonder if anyone ever got food poisoning or felt sick after eating it.

When I worked in a Sichuan Chinese restaurant we did the same procedure with chicken stock. Ours was probably 10-12 years old. Most larger Chinese restaurants do I think. :cowboy_hat_face:

Oh, okay! It must be a Chinese tradition then. The article does say that they are careful to do it properly; and if they have been doing it for 45 years successfully I guess it is okay!
