This is what I call KETO BLISS!!!

So yesterday a buddy tells me about this estate sale where I scored this little chest freezer this morning for $50. And wouldn’t ya know it…one of the local grocery stores was having a big meat sale. 10lbs of 80/20 and a whole chuck roll for a little over a $100.

While talking to the butcher, I told him that I usually buy 70/30 ground for the fat…so he went to the back and gave me a big bag of ground fat to mix with the 80/20.

Sorry…had to edit to show one more score! I purchased a big bag of these too!

Here’s a few freezer tips: If your fat comes in a big bag, spread the fat out on cookie sheets within layers of plastic. After it freezes, bag it. If ground, spread it about an inch thick so you can break it into chunks to bag it up.

If you have a favorite product or cut, find a wholesaler who will sell it to you by the case. The savings can be significant. Or, do what you did and stock up when there’s a good sale.

I love cooking as much as I love working out at the gym. Every time I cook and workout, I feel like I’m prolonging my life.

Forty years ago I got a job as a camp cook and was told I had to cook steak twice a week. I had no idea how to do that, and I’d never had a nice steak; my mother’s steaks weren’t very good. I consulted Joy of Cooking and followed the directions. I can’t remember the verbatim instructions, but I can remember what I did:

Heat cast iron frying pan to high.
Salt the pan.
Brown both sides.
Turn heat down (since I was doing multiple steaks, I transferred them to another pan set at a lower heat).
Finish cooking to desired doneness.

I ordered T-bones, but they sent me wing steaks, which seemed similar. They turned out great.
