I would loosely describe it as mug bread but I make it a bit differently with melted butter, 1 tbsp. coconut flour, 1/2 tbsp. oat fiber, 1/2 tsp. baking powder, 1 egg and 1 tbsp. either sour cream or plain yogurt.
melt butter in your dish and then combine the rest of the ingredients with a whisk. Microwave for 1.5 to 2 minutes. slice through the middle.
