What are some ok veggies on keto?
Veggies
Broccoli asparagus Brussels sprouts spinach are my go tos. I also have zucchini tomatoes cucumber in smaller amounts.
When I do meal preps, I do various combinations of cauliflower, cabbage, broccoli, green beans, bell peppers, sugar snap peas, tomatoes, asparagus, radishes, celery, artichokes, Brussels sprouts, celery, mushrooms, …, even some onions and a wee bit of carrots.
I’m not fond of that simple rule. Most people would think of beans, peas, and corn as above ground vegetables, even though they are technically legumes. IMO, that rule of thumb confuses someone new to keto more than it helps. Radishes are excellent keto root vegetables.
I find it curious that the Diet Doctor website recognizes this “technical” difference of what is a vegetable and what is not, but then says “berries” are OK for fruit – strawberries, blackberries, and raspberries. Technically, those aren’t berries. Berries would technically be bananas, grapes, watermelon, and oranges.
It’s also odd that the Diet Doctor lists eggplant as an “above ground” vegetable. Technically, it’s another berry.
The problem is that we have culinary definitions and botanical definitions…
