Vege side dish for 20 pax?

I need to bring a vegetable side dish to a function tonight. It needs to feed 20 people, and will be accompanying Curry and rice. Any suggestions for something easy, cheap and keto friendly I can fill up on and cook this afternoon? So far I have come up with a green bean dish, or saag paneer but I have a suspicion the saag paneer will either be too expensive or unpopular. Any thoughts? p

Cauliflower Mac and cheese? There are many recipes online. (I would love the saag paneer).

or mashed cauli with lots of butter and a few green onions, to soak up the lovely curry juice. I stopped ricing, far to much work, just cook it soft and take a potato masher to it, almost the same

Just to be a little contrarian - are you sure you want to go keto? Are these people all keto?

If these 20 people are not keto then mixing curry and rice and a bunch of fat is a recipe for weight gain and might not be looked upon kindly.

If you want keto vegetables and think a few others are keto - make two side dishes - like steamed broccoli with some seasoning or bell peppers and keto broccoli (“mac and cheese” style or covered in a buttery sauce).

Yeah, but they won’t know that. All they’ll understand is how delicious the dish is!

I ended up making saag paneer because I love it.

And in the process discovered how delicious fried spiced paneer is. My new snack I think!!

Looks yummy! My other suggestion with spinach would have been creamed spinach.
