Tri Tip roasts or steaks?

(Dirty Lazy Keto'er, Sucralose freak ;)) #1

So last week I did a whole Tri Tip roast at 138 for 16 hrs and I had said it was maybe the best beef I ever cooked !
Then yesterday, I cooked some Tri Tip steaks at 135 for 2 1/2 hrs… Intended 4 hours, but we had rush out… So we had a meat only, standing dinner :grinning: lol It was really good though too ! Could have been a little more tender, so I think 4 hours would have been better. Oh well, next time.

Both the roast and the steaks were marinaded in Soy sauce, and seasoned only with garlic powder and black pepper.

And now I’m trying to decide what I’d prefer ? Roasts or steaks ?
