At the Biltong Shop one of the wizards had fired up the outdoor grill.
He asked if I would like to try some tortoise. The pattern of the ‘lace curtain’ membrane wrap (ovine) makes the meat mix inside this amazing beef and lamb patty look like it is contained inside a tortoise shell.
The ingredients are grass-fed beef rump steak (ground), lamb’s liver, cow’s liver in a sheep omentum wrap. The omentum being the membrane from inside the abdomen.
I pan-fried them in butter and added some pink salt.
