Thoughts about frozen food?

After listening to Robert Lustig talk about frozen food having no fiber it makes me wonder is frozen meat a bad thing??

I’m a real neophyte when it comes to Zero Carb (ZC) where a lot animal protein is consumed, but it’s my understanding that just grinding a beef steak into ground beef changes it “somehow” that eliminates it from the “steak challenge”.

Being a geek, I also know that the main limitation in freezing a human and reviving them is not the cold itself, but the formation of ice crystals that wreak havoc and destroy many cellular structures.

I’m just speculating, but it would seem that damage through ice crystals at a cellular level would be more destructive than the mechanical grinding process.

So my question for some of the ZC experts is does freezing meat have an impact on consuming it?

Calling @amber, @Brenda, @Fiorella, any thoughts?

Frozen meat also has no fiber :wink:

YES, grinding meat would change absorption and digestion as it wouldn’t need to be “processed” in out mouth as much, less digestive enzymes etc.

And we know “juicing” produce increases absorption (and consequent BG reaction) in plants.

As far as meat goes, I don’t know if freezing would affect absorption. I do know someone who might know, because he’s the one who taught me that meat can in fact contain fiber.
@erdoke? Care to weigh in here? I’d love it if you did.

My understanding is that freezing flesh (beef, fish, chicken…etc) preserves vitamin and minerals. There is integrity of cellular structures that are compromised, creating a more soggy product upon thawing, but the nutrient content is still intact.

Structure of the vast majority of animal foods is much more easier on digestion. The only think that I’m aware of speeding up digestion and absorption of amino acids is pre-hydrolysis of protein. However, even the effect of that is moderate comparing with carbohydrate refining.
