Nice! I’m just brining some steelhead trout to try in the smoker - couldn’t really find any recipes that didn’t involve sugar, so made up my own with water, salt, garlic powder and onion powder. Nice to see that your fish only includes fish and salt!

i wish i could upload the rich smokey flavor. Seriously the best smoked salmon i have ever eaten! They also smoke Lake Trout ( a type of char) in the same way. Also delicious! I am sure your sugerless steelhead will be fantastic!

What kind of salmon is that? Is it native salmon in the lake?

My parents were just back up in MN. If I had known about the salmon I would have had them look for it. Looks yummy. Where did you get it?

We keep a steady supply of it in our fridge. 3 of our grocery stores sell it. Mashed with cream cheese and rolled in lunch meat or lettuce for easy to pack lunch.

The Salmon were stocked in response to the crisis created by the sea lamprey decimating the lake trout population. The Lakers have since bounced back so now we have both! Laker is like a mega-char. Like a cross between trout and salmon. Delicious grilled or smoked. There are two or three different sub species of Laker out in the Great Lakes IIRC.

As to the specific species of salmon in that package, I couldn’t say.
It’s all wild caught & spent their lives eating smelt and other small fish out in the big lake.
Superior has Chinook, Coho, Pink and Atlantic. Pick one. :slight_smile: As long as they taste good smoked!

I now see that the salmon they use is from Alaska, not from Lake Superior for some reason

We also have other salmonoid species: Whitefish, Rainbow (Steelhead), Coasters (brookies that get out into the big lake and get HUGE), Splake (cross between Laker & Brookie), some Browns, etc…

Found some smoked lake trout!!! Mmmmmmm. Toxic death never tasted so good!
Just salt smoke and very fatty char!

Try wrapping your smoked fish in bacon. Even better! If you have a smoker, lightly smoke some cream cheese next. Paradise.

Homemade bacon is even better. Don’t bother with expensive pork bellies, just buy a case of 50/50 pork trim from a packer, brine and smoke away!

Yummmm!!! I may try that! Found some local bacon at our farmers market yesterday that might just be better than sex however.
