Basically sausage wrapped in bacon and smoked. You can add some vegetables in the middle… I usually do some onions and maybe mushrooms, a little spinach.

It has been a few months since I made one. I’ve used spinach in them, but also Genoa salami, provolone, mushrooms… Once I used scrambled eggs with jalapenos.
Fatty is more like a template than a recipe. You can wrap anything in there that sounds good to you and fits.
I’ve never been a smoker.
Except for that one brief period in college . . .
My doctor asked me if I smoked I told him mainly brisket, ribs and chicken, but sometimes turkeys and pork butts
