Tasty after dinner chocolates

I make these in batches of around 100 and keep in the freezer.
Just the one with my after dinner cup of tea, well, ok, sometimes its two.
3x100g bars of Lindt raspberry intense dark chocolate = 153g carbs
250 mills heavy cream = 7 grams
250 grams unsalted butter = 0 carbs
250 grams philly cream cheese = 5.75 carbs
walnut halves = 0.14 net carbs each half
total 165.75 carbs, call it 170 grams.
If you substitute the raspberry intense with say Cadburys 86% cocoa dark chocolate then that drops the carbs giving a total of 69.75
Melt the chocolate in the heated cream,(can be done on the stove) leave overnight in the fridge to set.
Beat the chocolate cream mix very well till light and fluffy, beat in the cream cheese again get it well mixed and fluffy then beat in the butter.

So, depending on how large you pipe them out gives you their total carb count. in this instance 1.7 net carbs per chocolate or 0.7 grams carbs if using just the dark chocolate.
as I said I pipe this amount out into approximately 100 pieces on kitchen bake paper then freeze them.
I usually top each one with half a walnut for a better look but I’m too lazy to add their carbs to the total which is why I round it up.
These are a treat so I dont pig out on them but ration myself. (Phew, such self control)
The Cadburys dark orange works well
Be very careful when melting the chocolate in the cream, keep stirring the bottom of the pan so it doesnt stick and burn.
