I’ve heard about this Superbowl thing. That’s what people get in to that don’t have real (read college) football right?

(Mike W.) #9

Smoked chicken wings.

(Central Florida Bob ) #10

Atomic Buffalo Turds.

Best recipe name ever because there’s not a single word in the name that’s in the recipe.

They’re hollowed out jalapeno peppers, stuffed with sausage/cheese mix, wrapped in a bacon strip, and cooked in a smoker. Actually, they’re more like a template than a recipe. If you search for ABT or the name you’ll find a dozen or more variations.

If you don’t like jalapenos, you can mix pork sausage with shredded cheddar, a cup of cheese to a 1 pound roll of sausage, make into little meatballs (about a tablespoon?) and wrap in half a slice of bacon. Again, cook in the smoker and they’re done when the internal temperature hits 165 (about 2 hours? 1-1/2?)

I would never watch the superbowl :us:, but this is my favorite “appetizer”.

Cajun Dry Rub Wings

Cut chicken wings into drumettes and wingettes, dispose of the tips. Put in bowl and drizzle with olive oil. I use cayenne infused oil. Buy or make your favorite cajun seasoning mix (with salt) and mix in 1-2 tsp of baking soda. Sprinkle over the wings. Mix well. Place the wing pieces on a wire rack style pan and sprinkle with additional spice mixture. Bake at 400-425 degrees for 30-35 minutes turning at least once around 22 minutes and applying a little more spice mix. The baking soda will draw out some moisture to make them crispy on the outside and moist on the inside.
