Substitute for corn starch

I bought some sugar free Jello pudding without remembering it calls for milk. One suggestion is to substitute almond milk plus corn starch. The pudding won’t set without an ingredient like corn starch, which has too much carbs for keto. Can anyone recommend a low carb substitute?

Starches are essentially carbs. I don’t know about making sugar free jello with milk alternatives although coconut cream (which is denser) might be more effective. You can use arrowroot powder but again, it does have carbs.

I wonder if Xantan Gum would work. Zero carbs, all fiber.

I use Heavy Whipping Cream in the sugar-free jello pudding (Cheesecake Flavor), it was delicious.

Yeah probably, if you do use Xanthan Gum don’t 1 to 1 substitute it, use less Xanthan then you would starch. Also, using gelatin leaf or powder might work.

I’m confused. The “sugar free” Jello pudding mixes are cornstarch, and can have up to 24 net carbs per box. Just because something is “sugar free” or “no sugar added” doesn’t mean it won’t have a lot of carbs. They just mean refined sugar wasn’t an ingredient.

Xanthan would make for some slimy pudding. I don’t think that is the answer.

Why not just use HWC?

I whip heavy cream with a little swerve until it stiffens. Then I add sugar free baking chocolate, tasting as I go. Makes more of a mouse, as it’s pretty thick when I’m done, but very tasty!

I watched Bobby Parish’s keto breakfast video… his DIY starch consisted of 1 part baking soda, 2 parts cream of tartar… haven’t tried it myself though but it worked for his biscuits…

For future reference, for puddingish desserts try a search for keto custard or keto pots de creme. Many good recipes out there.

Chia seeds are also good for a Keto pudding.

Make it with equal amount of heavy cream, rather than milk. It’s awesome.
