I used to LOVE Stouffer’s brand spinach souffle. But the carb count was too high. Their recipe used skim milk and sugar! So I bought a bag of fresh spinach and headed home to recreate a favorite of mine.
I used no recipe. I knew the basic ingredients are spinach, milk, and eggs.
I pureed 4 oz fresh spinach with three eggs and 1/2 cup creme fraiche in my food processor.
(I would have simply used heavy cream, but I was out.) Creme fraiche was a great substitute.
Then I seasoned with kosher salt, fresh finely ground black pepper, and fresh ground nutmeg. Mixed thoroughly. I oiled a tiny one cup Pyrex casserole and filled halfway with Souffle mixture. Then microwaved on high until cooked through (in a 900 watt oven this took 3 minutes). This recipe made 3 tiny souffles.
