This indeed sounds like a nice idea to me!
My wife just started with the keto lifestyle also, once she’s able to do extended fasts we could save about 200 euros per month by not eating half of the week for a month.

The money saved on groceries can be used to buy great kitchen stuff!

We made the fennel salad tonight for the first time. This is not a combination that I would have come up with on my own. It was delicious and gave a very nice crunch.

There seems to be a lot of amateur chefs here. I appreciate everyone sharing!

I was experimenting when I came up with it - but it has been my “go to” salad for almost 3 years now. So much more interesting than a garden salad with an italian vinaigrette.
