Sous vide egg bites in a muffin tin?

(Amy Roush) #1

Hi there,
I know there is a lot posted about sous vide egg bites but my question is about making them in a muffin tin. I’ve seen that suggestion in various places but am just not getting how you can submerge a muffin tin in the sous vide. Am I missing something? I made mine in small mason jars but wouldn’t mind being able to do more at a time. Any tips?

You’d need to be able to wrap the muffin tin water tight if you want to store your eggbite for any amount of time. You could do a half submerge.

This all assumes you have a container that will accommodate your muffin tin flat and your IC.

My next experiment with this will be using the giant ice cube tray I got for my wife. It’s silicone, will fit easily in a ziplock gallon bag, and will make the bites easier to remove than my experience with the junky mason jars I have. I have two gallon ziplocks, that might not fit my muffin tin.

Here’s the ice cube tray:

I’ve made egg bites in a muffin tin before and I’ve made sous vide eggs cups, but not sure how, or why, you would want to mix the two. Sous vide doesn’t work that way.

I was just going to add that topic in here. These ice cube trays are awesome - each cube can easily handle 1/4 cup of liquid with about 3/8" to spare.

  • making these ideal for freezing pizza sauce for fathead pizza

Here’s some links for additional spots to buy them (Tovolo King Cube Ice Tray):
