Sous vide chocolate liqueur

I made this twice:

The problem is that you’re supposed to wait 2 months to steep.

My wife and I found some recipes where you make your own vanilla extract, like this one:

I decided to try the first recipe, but in the sous vide. I added everything as in the first recipe, but then put the jar into a sous vide bath at 145F (which is what my wife found in her recipe for vanilla extract). I put it in there about 15 hours or so, until it was dark.

When I drained it, I got about 377 grams (from original 500 grams of vodka). So I added alcohol to get it to 500 grams. I then made the simple syrup using allulose (I’m on an allulose kick), and combined the 500 grams of liqueur with 500g of simple syrup. This is quite a bit larger than the 750ml bottle I have, so I put it in another bottle too.

I made a drink with ice, one part vodka, one part chocolate liqueur, and one part cream. I thought it was great. I used 80 proof, 40% vodka, so he calculates it’s around 40 proof or so for the chocolate liqueur.

If you have a sous vide, it dramatically speeds up the time to make chocolate liqueur.
