So, about hummus

I know it has some carbs. It’s probably not for those who are in the early states of a Keto diet. However, if one would reach its target weight, what do you thinks about it?

It has some special charasteristics, although it has carbs it is one of the slowest foods to consume, so the glucose is not going crazy, more like a slow decline.

Tahini is even better, it’s mostly sesame oil.

I’m talking ofcourse on homemade stuff, nothing store-bought.

@richard said he might research the topic on the podcast but I didn’t notice it mentioned again, perhaps I missed it.

As you can imagine, I’m from the Middle East and these two products are very basic ingredients :).

Have you tried making hummus out of other ingredients. I’ve used carrots, beets, chickpeas (obviously) but I’m wondering if there is something else low-carb you could use as the base. Also we used to make a greek yogurt, tahini, garlic, lemon juice sauce that we would put on EVERYTHING. It was so good. I’m gonna have to find away to ketofy it and make some again.

Replace the chickpea with almond butter. So, a hummus made out of almond butter, tahini (sesame paste), fresh lemon juice, crushed garlic, extra virgin olive oil, salt, pepper. Use water to adjust for consistency.

Still, would be very interested in understanding the science behind hummus metabolism. You have to understand, telling someone like me to replace hummus with culflower is like telling a ketogenic person to replace bacon with tofu :smile:

It’s about 4 to 5 net carbs for a quarter cup. I don’t think I’d hesitate to occasionally have hummus once I’m more maintaining.

It’s also very rich in calcium and magnesium.

I have made this hummus with zucchini and my family had no idea it wasn’t the real deal. @odedia give it a try.
