I love having a big serving of zucchini (sautéed with garlic in butter, with lots of “lite salt” for a hit of potassium) next to my scrambled eggs every morning. My family thinks it’s nutty, but I can hardly start my day without zucchini.

One of my first low-carb loves was Laughing Cow cheese spread on a slice of deli turkey, topped with sugar-free apricot jam, and rolled up. Still a favorite.

Tuna salad made with mayo, curry powder, and apricot jam.

A little higher carb count, but I practically raised my (now teenage) daughter on frozen strawberries thawed out, sweetened with sucralose, and mixed with cottage cheese.

I find sour cream works well as a substitute for mayonaise. I have made my own mayo but didn’t really care for it.

I told you I could ketofy anything, anywhere.
My aunt’s house. I’m staying overnight caring for her after surgery. Someone brought her a chicken pasta salad. I threw some romaine in a bowl, picked half the chicken out of the pasta salad and threw it in the bowl. Added cherry tomatoes, celery, green olives, walnuts, cheddar cheese and capers. Tons of mayo and grainy mustard on top. #Ketofied

What brand of strawberry jam do you use? Everything I’ve looked at has maltodextrin in as one of the first ingredients

I had #1 yesterday except with Philly jalapeño cheese. So good and spicy.

I’ll be trying your second suggestion next.

Shit. IDK the brand. I won’t be home till tomorrow, but it has no maltodextrin, only sucralose.
