Should I skim the oil in slow cooker bone broth?

I’m making my chicken bone broth in a slow cooker. After a few hours, I noticed that there is a thick layer of oil on the top.
I used to skim the oil on top when I cook chicken with skin because I could only have only a little of the soup I make before I just couldn’t consume it anymore because it is too oily.
Now, in Ketogenic diet, fat is what we want to have more of and skimming the oil layer doesn’t make sense because oil is just fat.
So should I keep the oil or skim it off? What do you guys do?

If you’re going to skim the broth, wait until it’s done cooking, put it in the fridge and do it after the fat solidifies on top.

Only reason I would skim the broth is if I’m consuming it while fasting and trying to keep my caloric intake to an absolute minimum. Otherwise, you’re right, fat is good. Keep it there!

Yes, let it solidify, then you can skim it off with a spoon and cook up some veggies with it. Delicious stuff. The fat will help if you want it for fasting. So leave some of it behind in the broth.
