My GF wanted to make Jalepeno beef poppers again… But I had already put a hammering on the rest of the leftover Tri Tip for breakfast.

So I needed some kind of beef… Not a lot of it, but a half lb or so, of something cheap… but tender… and something I could Sous vide fast.

So I was at WinCo looking in the beef section, and found this ! Half off a nice little Ribeye :grin:
Only needed one… But I saw another for half off, and had to buy it too :slightly_smiling_face:

Well I got it from here, and it gets repeated often…
But basically you just cut jalepenos in half long ways. Fill with a couple spoons of cream cheese. Then top with thin sliced beef… Or chicken. Top with grated cheddar. You can put bacon bits on too… Especially good with chicken. Then bake at 350 or so, until the Jalepenos are cooked (soft) then throw on some gaucomole :slightly_smiling_face:

Easy peasy ! Super good, and in fact, we will be having them again in a few hours :slightly_smiling_face:
Doing the Ribeye right now for about 4 hrs at 131. Shooting for rare, as it will get some more cooking in the oven anyway…

…then cranking up the SV to 133 for about 24-30 hrs for the beef brisket that is already in their too :slightly_smiling_face:

…then when that comes out tomorrow evening, in will go both some Baby Back pork ribs, and a pork shoulder roast for my breakfasts :wink: The ribs 150 for 20hrs, and the pork roast for 30-36 hours… For a pulled pork finish :slightly_smiling_face:
