One package went to the freezer for later in the week. The other one, I’m gonna cook a few slices tonight and have them with one of the ribeye’s I also purchased from the same meat market. I’m in heaven, I haven’t had Hog Jowl in a long time.

I used to make guanciale, similar to pancetta, but has more delicate texture.
