Great video! I absolutely love sardines.
I’ve always been really curious to canning sardines myself. It’s not that difficult. I go through about five 6oz store bought tins of herring a week and the costs add up. Quality sardines/herring are down right pricey! The one’s in the vid are about $6 per small tin.
All you need to do it is a pressure canner like the one below and you can do 18 pints of sardines at a time. That way, you get to pick the oil they’re in (or just water and salt). My local restaurant depot often has great deals for fresh unprocessed sardines, and my local chinese grocery stores do too. Prices are around like $2.00 - $3.00/lb:

Well, I guess you also need a spouse who doesn’t mind you processing 20lbs of fish on the counter, and that’s where my plan has met resistance…
I guess I’ll have to stick to chili, chicken, and beef for the moment.
I stayed in the village of Peniche for a few weeks. It is an old town on an island linked to the land by a causeway. The beach to the south of the main town is one of Portugal’s best surfing spots. You can smell the fish cannery on production days while out surfing. We ate omelette with a glass of white port after most morning surf sessions. Another local dish was pork with mussels.
The morning silence of the house, while everyone else slept, was disturbed by my sudden and boisterous chortle.
It’d be even funnier if you met her. She’s the sort of gal who literally alphabetizes the spices in the cupboard (literally: definition “b”). Fish guts will probably never be entering her kitchen…
