Salmon Belly!

Anyone eat it? A fish monger near here recently started selling it again. I used to like it as a fatty snack before I was keto, as a way of getting my fish oil naturally, but now I have an even better reason to eat it.

Best thing about it, is that because it is so fatty, it’s disliked by many, and in some cases virtually given away. The old place I got it from left a decent layer of meat on it, so it was about 5mm fat, and 15mm of meat.They charged $5/kg for the stuff. But the new place shaves it so there’s only about 3mm of meat left on it, and charge $2/kg. It doesn’t taste anywhere near as good, but at least its available. Many pleases just throw it out (or perhaps grinds it into cat food?)

I just pan fry it with a little salt or bacon salt, but anyone else have ideas on how to make the most of this wonderfully fatty food?
