Research on Acrylamide

Firstly I would like to say a big thanks to the Keto Dudes for helping me read the science behind the headlines!

There has been some noise around Acrylamide in food on the news recently in the UK, linking high levels to increased cancer risk. It seems that Acrylamide is concentrated in foods that are cooked until crispy. Oh no, my bacon crisps! But reading further it seems that:

  1. It looks as if only starchy foods (particularly potatoes) are implicated
  2. The link between Acrylamide and cancer has only been shown in rats, and it looks like the pathways for humans are quite different.

So I think the message is - Keep Calm and Keto On, right?

And recent news about increased carcinogenic impact of coffee due to acrylamide has also been getting lots of attention. Due to the long history of coffee usage, and the non-traditional processing of it in typical American industrial style (light roasting, instant coffee, and drip rather than steam expressed) I was curious to find out more and was researching online.

I enjoy organic espresso (dark) roasted coffee which I make with a stovetop steam espresso maker :wink:

However, bottom line is that the research indicates that brewed American drip coffee should be among the least of your concerns - compared to deep fried carbs, which are exposing folks to exponential amounts of acrylamides - listed out in the above article!!!

Now I’m wondering how best to detox from my years of Kettle Chips and potato fries… and am even more glad to be KETO!

i hope the general public grabs on to the coffee = cancer narrative, less lines and cheaper prices!

Damn straight… the research looks pretty weak so far and cigarette smoke seems much more dangerous than French fries - which shouldn’t matter to a ketonian anyway. :stuck_out_tongue_winking_eye:

I see a lot of cancer risk type associations being postulated but then the person reading it is afraid to eat this or that because X says this and that!

From just looking at the endless mess of research about the research, I have found that it is always linked to eating too much bleached sugar or a bleached processed (man made) something stripped of it’s 100 or so nutrient values (micron particulate trace minerals, elements) and gut flora composition lowering immunity and ability to detoxify the body.

It is a kind of paradox because sugar blocks (in excess) the body from absorbing all kinds of essential nutrients and antioxidants and then your body becomes excessively glycated where sugar basically becomes part of the bodies entire molecular build, like the skin and internal organs etc., then you have the immune system attacking the gut flora and things like the myeline sheath etc. and before you know it you got cancer, diabetes or something?

Your are what you eat, so any research done on any living thing is going to react on its bio-molecular build in any study on humans or in a laboratory setting on any type creature is going to give you that result or another result as to the conditions of the biological variables in which it thrives and what that substance is and how it reacts to whatever? When you don’t consider the grub and gut flora then your going to get skewing type results blaming the substance and not the conditions of the specimen tested?

The down side is when you lower the glucose rich environment the body starts absorbing the necessary essential nutrients etc. but likewise neo-modern toxin from the environment opening up the body to a free range of toxin absorption. Thier are many ways to detoxify also starting with, dietary intake i.e. gut-flora-biome, antioxidant rich diet, supplementation and autophagy!
