Replace Macaroni with Bacon in Mac and Cheese?

I first thought of this as a joke when seeing someone post about Mac and Cheese. The more I think of it, the more I want it though.

So, the task, figure out making a good “Mac and Cheese” that replaces the Macaroni with Bacon.

I know there are a lot of “Keto Mac and Cheese” recipes out there, that replace the macaroni with cauliflower, for instance, and some that put bacon in as well. That’s all well and good, but not what I’m going for. Those are replacing the macaroni with something other than bacon, and adding bacon in the same way one might make Bacon Mac and Cheese otherwise.

I’d imagine this will involve a lot of bacon and some sort of cheese sauce. My concern is with the cheese sauces ability to cling properly to the bacon. Not sure if that will be much of a problem or not, and not sure what else should go into such a recipe for a good flavor profile.

Any thoughts? Suggestions? Know of such a recipe already?

we buy pork fat and skins, it comes in a rolled up package… i cut it into slivers and cook it up with onions, garlic and a veggie… almost has a noodle texture, so i could see where you are coming from on this!

I make a cauliflower faux mac and cheese and it usually has a ton of bacon. Or ground beef or chicken or sausage… Yum!!!

I do this too! For easy cheese sauce, just melt shredded cheddar in hwc over low heat.

Sometimes melted cheese separates. Keto folks don’t want to use a bechamel sauce so what you can do is use sodium citriate to make your cheese creamy. You can find it on amazon.

Here is a basic recipe - minus the pasta, of course.
