Stumbled on this on this old paper, 1988 and I haven’t seen it referenced here yet, though perhaps I’ve missed it since I haven’t immersed myself in carnivorism. I found it interesting despite the limitations of small sample size and being observational/speculative rather than experimental.

Conclusion:
It has become customary to blame high serum cholesterol levels on the ingestion of animal fat. Perhaps the real culprit is an unknown factor in grains, milk products, or sugar that interferes with the metabolism of animal fat.

Typical improvement of health on a ketogenic/LCHF diet. They were all on it long enough to become fat-adapted.

I like how the author notes that “Serum cholesterol levels of less than 200 mg/dL have been advocated.” Interesting, since statin manufacturers today think anyone with a level over 130 should be on a statin!
