Now I’m not an expert on Keto been on a little over 5 week. Saw this recipe Garlicky Shrimp Alfredo Bake on a facebook post.
It looks like a good one for my diet, I modified it a little and would like to know if I’m interpreting this right.
• 10 oz. penne subsituted Cabbage cook in microwave
• 3 tbsp. butter
• 3 cloves garlic, minced
• 1 lb. medium or large shrimp, peeled and deveined
• 3 tbsp. chopped fresh parsley
• 2 tbsp. all-purpose flour substituted almond flour
• 3/4 c. milk substituted Heavy cream
• 1/4 c. low-sodium chicken broth
• 1 c. shredded mozzarella
• 1/4 c. plus 2 tablespoons shredded Parmesan
• Freshly ground black pepper
• 2 large tomatoes, chopped (about 1 cup)

The sauce was a little thin I’d like it thicker what should I add. I was really good! Yummy!

I would skip the almond flour, I don;t think you need it. I usually thicken simply by reducing the sauce down to desired thickness.

Oh I was thinking about adding more almond flour or reducing the cream. So do I just simmer longer to reduce the liquids ?

Don’t add the chicken broth. Skip that.
In lieu of the almond flour, add a beaten egg yolk instead.

I would just let it simmer to reduce, gets richer. a pich of xanthum gum may help. But @Fiorella is our resident keto gourmet, so i would try her method, make sure you temper the egg to prevent curdling

Yes. I always simply reduce liquid to get a thicker sauce. THis is great because you get a much more flavoursome sauce. If it needs it, I simply thrown in a bit of butter at the end which thickest a bit and gives it a bit of gloss.
