I’d say toss the ball back in her court. She made the first statement “Keto is known to cause metabolic damage.” OK, where has that been proven?

Take the softer approach and say something like “Oh! I didn’t know that! I’m really concerned that it could be true. Help me understand it and show me where you got that information from.”

I’ve had a few years now of people that, as soon as they hear I’m full-keto, toss down in front of me just about any quack opinion, study or research that they can find with the demand that I counter or disprove it. I don’t. It’s a waste of my time and energy. If I can get them questioning things themselves, it’s a win for me (and it let’s me continue to be lazy)! I’m dozens of pounds down, all my (lab proven) tests are going very positive and I feel the best I’ve felt in decades. I am all the proof I need.

yeah I’m not so much concerned with her changing her mind as I am with her followers being scared off trying

Maybe just comment something along the lines of you’re sorry she’s not done well on it, but there are plenty of people thriving and reversing serious health issues by following it. People will always draw their own conclusions and if her followers are so easily swayed away from keto then chances are they were never going to be on it for the long haul anyway.
