In some cultures a tortilla is considered real and necessary food.

I am going to go and learn traditional tortilla making (I live 30 miles from the Mexican Border so I have places to learn). Then I will recreate it with Keto ingredients. I know traditional tortilla is made with lard, so that is a good thing.

Traditional tortillas are made from limed corn meal and water ā no shortening. The flour tortillas that we see here in the US (and that are found in limited parts of the high desert in northern Mexico where corn meal has not historically been readily available) are quite different. They do contain some shortening although the recipes Iāve seen all call for vegetable shortening or oil.
Or you can just make your tortillas straight outta cheese- mozzarella works the best⦠Just pour some shredded mozzarella in a small cast iron pan that has been heated to medium⦠just covering the bottom of the pan- when the edges turn brown use a spatula to dislodge it and turn it over⦠then take it out and put it on your plate and put stuff on it- roll it up and eat it! In this case I made two ācheese tortillasā and put enchilada sauce shredded chicken, cabbage, and guacamole inside⦠pretty yum yum!
